Albert Park lake best ridden with a group of mates at around midnight when there are no cars and you are free to draft and glide at your leisure. Also when it dark it seems like you are going much faster then you actually are so you feel like a Cadel.

It’s not so much as a course as a time. On various days of the week I have to test the fire services at the major shopping centers (yes I do this using my bike). If I do my test wrong then the shopping centers get evacuated, because of this reason I do the tests really early, I’m talking stupid early so my mistakes do affect anyone (except bakers). At this time of the day I own the streets, I own the hills, I own the traffic lights and I can pretty much go anywhere and do what I need to. I often wonder if I entertain the CCTV operator as I scream through town.

Mine is the Fernleigh track in Newcastle. It's 15.5 kms one way winding through some great bushland on relatively smooth surfaces. There are also heaps of MTB tracks that shoot off from the main track.
Here is the website with info on the track:

At the moment, it is definitely the Casuarina drive, Nightcliff area round to Fannie bay and Mindil beach ride. Plenty of ocean breazes, all on a nifty bike path, great views, great weather (at the moment...). It is just a very invigorating, enjoyable ride....I do the ride every time I'm on patrol, and it's great when I'm able to do it on days off with my daughter and girlfriend.

Haven't really found a firm favourite here yet, though I've done Sydney to Palm Beach a couple of times. Need to get my hardtail out to the Blue Mountains soon, there's some good stuff there I hear.
My old favourite back in the UK was The Ridgeway track in Wiltshire, starting and ending at Avebury, but doing a figure-8 loop through Wiltshire, Berkshire, Oxfordshire and touching the edge of Somerset on the back loop. I had a nice long one-day run there, with a pint or two in the Red Lion to finish and a campsite in the Silbury Hill layby. About 7 hours round-trip IIRC. Also Gap Road in Brecon for a nice 80 mile-or-so loop, and Clyne Valley in Swansea for a fun day out thrashing singletrack and bowls. Damn good at night with good lights, that one.
